You can use a firm white fish fillet, e.g. Mahi Mahi.
Ingredients:
Olive oil as needed
4 teaspoons of coarse ground pepper corn
Salt to taste
1 tablespoon Ginger & Garlic mix
3 green chillies sliced or chopped up
½ fresh lemon

Method:
Add oil into frying pan, let it heat up, then add peppercorn and let it sauté until you get the peppercorn aroma. Add ginger & garlic paste and mix well. Add fish – skin down – and sprinkle salt, let it cook for 3-4 mins, with a spatula lift up fish so that it doesn’t stick to the frying pan – do not flip fish at this point. Cover frying pan and let fish cook in its own moisture for 5-7 min. If at any point you feel the fish is getting too dry, squeeze half a lemon, cover and let it cook. Cook at medium heat.
Once you see fish is half cooked, add the green chillies. Mix chillies as shown, gently flip fish over, cover and let it cook for 4-6 mins at low heat. Once fish is cooked, plate it, leave ingredients in the frying pan – cook the chillies well, spread all the ingredients mixture over cooked fish a shown.
