Steamed chicken in green pepper sauce authentic Sichuan Szechuan recipe #21 藤椒雞



Steamed chicken in green pepper sauce uses fresh green pepper & Sichuan peppercorns. Enough amount of pepper oil is the key to the success of this dish.

It's quite similar to another Sichuan dish: saliva chicken (). They share the similar cooking method for the chicken, but the chili sauce is completely different.

It's a cold & refreshing chicken dish. Hope you will enjoy it in this coming hot summer.

Ingredients:3-4 portions

500g free range chicken
1 thumb size ginger sliced
1 large spring onion
2-3 star anises
1 tbsp Sichuan peppercorns
2-3 tbsp Chinese cooking wine

3 tbsp red chili
3 tbsp green chili
1 tsp salt for marinating
1 tbsp Sichuan peppercorns
2 tbsp light soy sauce
3 tbsp pepper oil
2 tbsp fresh green pepper / Sichuan peppercorns
white pepper powder
1 tsp salt or more
enough chicken soup

fresh red chili & coriander for decorating
