Cooking Stir Fried Aubergine & Green Pepper @ Home

Welcome to Asian Cooking @ Home - Our aim is to create easy & quick Asian dishes to fit the needs of most peoples busy life style.

This is one of my favourite vegetarian dishes so full of flavour. If you like aubergine, you are going to love this! Serve it with rice.

Ingredients:
2 Aubergines
1 Green Pepper
2 Tomatoes
2 Spring Onions
3 Cloves Garlic
½cm Ginger
1 Tbsp Soy Sauce
1 Tbsp Sugar
4 Tbsp Cornflour
Salt to Taste

Methods:
1. Finely chop the spring onions, garlic and ginger.
2. Cut green pepper and tomatoes into bite size pieces.
3. Peel and halve aubergines, then cut into bite size wedges.
4. Place aubergines in a large mixing bowl and toss with cornflour – ensure an even coverage.
5. Place aubergines into 1 litre of hot oil.
6. Deep fry for 6 minutes until light golden, then remove from oil and drain.
7. Heat 1 Tbsp oil in a wok, add spring onions, garlic and ginger, fry for few seconds.
8. Add tomato and pepper, fry for a minute.
9. Add aubergine, soy sauce, salt, sugar and stir fry for a minute.
10.Transfer onto a dish and serve.
