Stir Fried Aubergine & Green Pepper Recipe
Welcome to Asian Cooking, I'm Xiao Wei (Chow Way). My aim on this Asian cooking channel, is to create some quick & easy Asian recipes ideal for when you want to cook something quick or a mid week dish.
This is one of my favourite vegetarian dishes so full of flavour. If you like aubergine, you are going to love this! Serve it with rice.
Ingredients:
2 aubergines
1 large green pepper
2 tomatoes
2 spring onions
3 cloves garlic
0.5cm ginger
1 Tbsp soy sauce
1 Tbsp sugar
4 Tbsp cornflour
Salt to your taste
Methods:
1. Finely chop the spring onions, garlic and ginger.
2. Cut green pepper and tomatoes into bite size pieces.
3. Peel and halve aubergine, then cut into bite size wedges.
4. Place aubergine into a large mixing bowl and toss with cornflour – ensure an even coverage.
5. Place aubergines into 1 litre of hot oil.
6. Deep fry for 6 minutes until light golden, then remove from oil and drain.
7. Heat 1 Tbsp oil in a wok, add spring onion, garlic and ginger, fry for few seconds.
8. Add tomato and pepper, fry for a minute.
9. Add aubergine, soy sauce, sugar, salt and stir fry for a minute.
10.Transfer onto a dish and serve.
