STUFFED QUINOA PEPPERS!



PREHEAT OVEN TO 350 DEGREES
BAKE FOR 30 TO 45 MINUTES

INGREDIENTS:

5 OR MORE CHICKEN SKEWERS 1SP EACH OR 2 FOR 3SP ( ANY PROTEIN IS FINE I BOUGHT MINE AT COSTCO)
1 CUP UNCOOKED QUINOA 1/4 CUP IS 2SP
COOKED
1/2 OR MORE MARINARA SAUCE ( I USED WHITE LINEN FROM COSTCO)
1 TO 2 CLOVES FRESH GARLIC
SALT AND PEPPER TO TASTE
5 TBS OR MORE OF ZERTO ( 4 CHEESE BLEND OR ANY)
5 PEPPERS ( ANY COLOR)
1 LARGE VIDALIA ONION ( OR ANY)
1PKG SLICED MUSHROOMS ( ANY )
1.5 CUPS OR MORE VEGGIES: RED, YELLOW, ORANGE PEPPERS, KALE ( CAN USE ANY )

BOIL 1 CUP QUINOA TO 1.5 CUPS WATER BRING TO A BOIL AND COVER FOR 17 MINUTES. FLUFF AND AFTER AND ADD FRESH GARLIC AND SALT/ PEPPER

IN A LARGE SKILLET STIR FRY ONIONS ADDING IN ASSORTMENT OF VEGGIES
ADD FRESH GARLIC, SALT AND PEPPER TO TASTE.

HOLLOW OUT PEPPERS
CUT UP CHICKEN SKEWERS OR CHOICE OF PROTEIN

I MEASURE PORTIONS OF 1/2 CUP OF VEGGIES,1 CHICKEN SKEWER AND 1/4 CUP QUINOA OR YOU CAN ADD ALTOGETHER!! MIX ALL THREE INGREDIENTS TOGETHER! ADD A TBS OF MARINARA TO EACH!

ADD TO PEPPERS THEN TOP WITH 1TBS OR MORE MARINARA AND 1 TBS OF CHEESE ( OPTIONAL)!

BAKE FOR 30 TO 45 MINUTES!!
