I'm super excited to share this one - yes I know I'm almost going on a binge with cheesecakes but I've just been loving coming up with many flavour ideas lately for cheesecakes. If you haven't seen btw you should definitely check out my recent oreo cheesecake - it's so simple and so yummy without the hassle of gelatin, and even tastes more like a baked cheesecake even tho it is cold-set!
Anyway, I digress, I made a macaron a year or two back and basically tried to instead of pairing tangy berries with cracked black pepper, decided to use lemon which has similar tart profile to berries. The pairing of a macaron with cracked, fresh, mixed peppercorn on it, and super zingy lemon curd filling was SOOO YUMMY. It gives you some sort of layer of flavour from the peppercorns, and just enough heat when done right.
Altogether this cake with the curd, meringue, lemon baked cheesecake, slight chocolatey crust just brings it to another level! It's actually so rich yet light and refreshing at the same time.
It was not part of the schedule for this month but an intuitive decision for a friends birthday
